As for current series, Star Trek: Lower Decks season 2 starts up next week, Star Trek: Prodigy is coming in the fall, Star Trek: Strange New Worlds is on track for 2022, as are Star Trek Discovery season 4 and Star Trek: Picard season 2. At this current pace, its possible by 2023 that there will be a new Star Trek episode for every week of the year.
As for what Starfleet Academy is, its HQ is in San Francisco. It is where Federation citizens, hoping to reach command level in Starfleet train. Its a Starfleet specific college. Its been seen or mentioned in all the Star Trek series in some form or fashion as all the Federation side Star Trek characters had to graduate from it to serve. A couple of episodes here and there have been devoted to the location.
Likely the most famous mention is in Wrath of Khan for the Kobayashi Maru training sequence that is supposed to teach officers that there are no win scenarios. It was also briefly seen in the Kelvin universe set Star Trek 2009 movie. A hint of what might be to come could be in the Star Trek: Short Treks episode "Ask Not" when a cadet (therefore still at the Academy) was put to the test to release an arrested Captain Pike while a Starbase is under attack.
Could be a very interesting series as could follow cadets at various stages of training at the Academy as deal with college and new to adult hood problems while also struggling with the pressure of attempting to achieve their ambitions. Or alternatively, if trying for all ages, could also show the struggles of the teachers that know their training the best the Federation has to offer that has to prepare cadets to make the right moral decisions that could impact millions (our favorite Captains often made decisions that had planetary consequences), prepare them to survive the dangers of exploration, while recognizing that all the training will not prevent many of them from dying, possibly on the teachers' watch.
